Delicious Roasted Vegetables - as a side dish or hearty enough for a meal.

Recipe Ingredients for Roasted Vegetables

1/4 c olive oil
2 T Balsamic Vinegar
4 c Squash Butternut (Cubed)
1 Sweet Potato (Cubed)
1 Red Onion (quartered & separated)
2 Red Bell Peppers (Cut into chunks)
6 Potatoes, Red, Flesh And Skin (Cubed)
1 t Thyme
2 t Rosemary
1 Salt to taste
1 Pepper to taste

Recipe Directions for Roasted Vegetables

Clean & cube all vegetables - put into large bowl. Mix Olive Oil & Balsamic Vinegar, Thyme & Rosemary in small bowl. Power oil mixture over vegetables and mix well. Pour Vegetable/Oil mixture into roasting pan and roast in oven on 475 for 35-40 minutes, stirring vegetables every 10 minutes.
