Recipe Ingredients for roasted vegetables and penne pasta

16 ounces whole wheat pasta
2 1/2 cups portabella mushrooms
1 1/2 cup zucchini
5 roma tomatoes
2 cups mozzarella cheese
1/4 cup parmesan cheese
1/4 cup olive oil
1 tsp kosher salt
1/2 tsp black pepper

Recipe Directions for roasted vegetables and penne pasta

Cook pasta according to package directions, but don't cook all the way. Cut vegetables into same size pieces and place on cookie sheet. Drizzle olive oil over top, kosher salt, and black pepper. Toss to coat. Roast in 400 degree oven for 15-20 minutes or until veggies are slightly browned. Mix roasted veggies in with cooked pasta. Mix in mozzarella and parmesan. Place entire mixture in 13 x 9 inch baking dish and back for 30 minutes or until bubbly and golden on top.
