Recipe Ingredients for roasted vegetables with mustard soy maple glaze vegan

2 onions, sliced thickly
1 sweet potato, peeled and diced in 1" pieces
2 potatoes, peeled and diced in 1" pieces
1 cup green beans
1 cup edamame
3 cloves garlic, crushed
3 tbs tamari
3 tbs maple syrup
3 tbs dijon mustard

Recipe Directions for roasted vegetables with mustard soy maple glaze vegan

  1. in separate bowl mix tamari or soy sauce with mustard and maple syrup and garlic

  2. in another bowl add all vegetables

  3. mix vegetables with tamari mixture until evenly coated

  4. place in 13 by 6 pan and cover with aluminum foil

  5. in oven preheated to 400 degrees place pan, roast for 25 minutes

  6. uncover and reduce heat to 350 and roast for 25 minutes more

  7. remove, toss vegetables and return to oven for 25 minutes more

  8. makes 6 genrous servings
