I cobbled this together from a few different recipes based on what I had in my fridge. Delicious. Also, by happenstance, vegan.

Recipe Ingredients for Roasted vegetables with lentils and vinaigrette

4 beets
16 oz brussels sprouts
1 sweet onion
1 cup lentils
1/2 teaspoon salt
2 tablespoons balsamic vinegar
7 tablespoons olive oil
1 tablespoon dijon mustard
1/2 cup toasted walnut pieces
1 garlic clove
3 cup Beet Greens

Recipe Directions for Roasted vegetables with lentils and vinaigrette

  1. Soak the lentils in water for at least an hour.

  2. Heat the oven to 400. Cut large brussels sprouts in half, and trim any tough stems. Peel and cut the beets into biggish chunks (about an inch). Peel and chop the onion. On a rimmed baking sheet, toss with 2 TB olive oil and a pinch of salt and pepper. Roast for 30 to 35 minutes, until the vegetables are tender and nicely browned.

  3. Meanwhile, drain the lentils and cook them in boiling water until tender, about 25 minutes.

  4. Toast the walnuts.

  5. Blanch the beet greens in boiling water for about 2 minutes. Remove and put in a cold water bath. Then saute them with a minced clove of garlic in a TB of olive oil for about 5 minutes.

  6. Meanwhile, make the vinaigrette. Combine 2 tablespoons balsamic vinegar, 4 tablespoons olive oil, 1 tablespoon dijon mustard, 1 packet of Splenda, and 1/4 teaspoon salt. Mix well.

  7. Combine lentils, roasted vegetables, beet greens, and walnuts in a bowl. Pour in the vinaigrette and toss to mix.
