roasted brussel sprouts, baby yukon gold potatoes, onion and butternut squash

Recipe Ingredients for roasted vegetables - 1

1/4 cup olive oil
3/4 lbs brussel sprouts
3/4 lbs yukon gold potatoes
1/2 lbs butternut squash
1 yellow onion
1 tbsp salt

Recipe Directions for roasted vegetables - 1

  1. toss the vegetables (except for the butternut squash) in olive oil, salt & pepper

  2. place in a baking pan and roast at 400 for 15 minutes.

  3. toss the butternut squash in the oil and add to the pan after 15 minutes, lower the heat to 360 and roast another 60 minutes.
