Recipe Ingredients for Roasted Vegetable Salad

1 (100g) Red Bell Pepper
1 (50g) Courgette
1 (50g) Eggplant
1 tbsp Olive Oil
10 black olives
1 (50g) Tomato
1 pinch of salt
1 ground black pepper

Recipe Directions for Roasted Vegetable Salad

  1. Slice Peppers

  2. Slice Courgette & Aubergine.

  3. Place into a roasting dish.

  4. Drizzle with 1tbsp olive oil.

  5. Add salt & pepper to taste.

  6. Roast at 200degrees farenheit for 25 minutes turning the vegetables occasionally.

  7. Cut tomato into segments and serve with the roasted veg and 10 olives
