Recipe Ingredients for Roasted Vegetable Quesadilla

1 9/10 oz Multi-Grain
1 cup (1" cubes) Eggplant
1 medium raw Bell Pepper Green
10 strips Peppers, Sweet, Yellow
2 cup Spinach
1 serving Fancy Shredded Mild Cheddar Cheese
1/2 cup chopped raw Grape Tomatoes
3 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Roasted Vegetable Quesadilla

  1. Cut peppers and eggplant into strips

  2. Coat with cooking spray, pepper, and crushed red pepper flakes.

  3. Roast for 30 minutes

  4. Saute the spinach, onions, and tomatoes

  5. Take the Flatout bread and put your cheese and veggies on and bake on each side in a frying pan for about 2-3 minutes
