There is no salt added to this soup as the chicken stock is already salty, and it can be easily made into a vegan recipe by using vegetable stock and vegan canned beans. This will make about 6 quarts, or 18 1.5 cup servings

Recipe Ingredients for Roasted Vegetable Poblano Soup

4 poblano peppers
1 cup fresh green beans, snapped to 1/2 inch
1 cup celery, chopped
1 cup bell pepper, chopped
4 sweet onions, cut in half
1 cup carrots, chopped
6 cups chopped cabbage, (1 small)
4 large tomatoes
64 oz chicken stock
15 oz can diced tomatoes, italian style
15 oz pinto beans, canned
16 oz can black beans
2 cups water
3 tbsp roasted garlic

Recipe Directions for Roasted Vegetable Poblano Soup

  1. Roast poblano peppers on a cookie sheet until barely charred, then put in a paper bag to steam. Set aside.

  2. Pour chicken stock into large soup pot and heat to medium high. Add green beans and let cook while preparing the rest of the ingredients.

  3. Cut sweet onions in thick 1/2 inch slices and place on same cookie sheet. Roast until sides are beginning to char then remove to cool.

  4. Cut tomatoes in half and place cut-side down on same baking sheet. Toss celery, bell peppers, and carrots and pour in layer on cookie sheet. Roast until vegetables are beginning to brown.

  5. Take poblano peppers, cut in half and rinse with cold water, removing seeds, membrane and skin. Chop well and add to chicken stock.

  6. Remove chopped vegetables from broiler, remove skin and chop tomatoes, then add entire pan of vegetables to chicken stock. Cut slices of onions in quarters and add to chicken stock and add 2 cups water.

  7. Take pinto beans and mash well, add them to stock with black beans and can of tomatoes.

  8. Chop head of cabbage and add to soup. Allow to simmer on medium until cabbage is cooked.
