This is wonderful on Phyllo Dough, with truffle oil drizzled on top after it is finished.

Recipe Ingredients for Roasted Vegetable Pate

1 head cauliflower
1 large sweet onion
10 large mushrooms
8 cloves garlic
1/2 cup olive oil
1 tsp salt
1/2 tsp pepper

Recipe Directions for Roasted Vegetable Pate

  1. cut all vegetables into bite size chunks.

  2. mince garlic, add this to the oil, salt and pepper.

  3. pour the oil mixture over the vegetables and roast in a 350 degree F oven for 35-40 minutes until golden and soft.

  4. in a food processor, combine all the vegetables and puree. cool in containers and refrigerate until needed for other recipes.
