Colorful combination of sweet and savory vegetables, good as a side dish, salad or light meal. You can substitute whatever veggies and herbs you have on hand.

Recipe Ingredients for Roasted Vegetable Medley

2 T. Olive oil, divided
1 large sweet potato, peeled and cut into 1 inch pieces
1/2 lb. parsnips, peeled and cut into 1 inch pieces
10 oz. baby carrots
1 lb. frozen asparagus, cut into 1 inch pieces
1 red onion, cut into 8 wedges
1 red bell pepper, cut into 1 inch pieces
2 cloves garlic, minced
1 T. Basil, Dried
1/2 t. kosher salt
1/2 t. ground black pepper

Recipe Directions for Roasted Vegetable Medley

  1. Preheat oven to 400 degreees. Grease 2 baking sheets with 1 T. of olive oil

  2. Place sweet potato, parsnips and carrots on the baking sheets. Bake in preheated oven for 30 minutes, then add the asparagus, red onion and red bell pepper and drizzle with the remaining 1 T. of olive oil Continue baking until all of the vegetables are tender, about 30 minutes more. Once tender, remove from the oven and allow to cool for 30 minutes on the baking sheet.

  3. Toss the garlic, basil, salt and pepper together in a small bowl. Then sprinkle over the roasted vegetables and toss to mix. Serve at room temperature or cold. Also good warm.
