Recipe Ingredients for Roasted Vegetable Medley

6 cups zucchini, sliced
210 g mushrooms, sliced
2 large red bell peppers
1400 g cauliflower
2 medium onions
13 baby carrots
1 tsp oil
1 tbsp salt
2 tsp pepper
1 tbsp thyme
5 cloves garlic, minced
2 tbsp chicken broth

Recipe Directions for Roasted Vegetable Medley

  1. Pre-heat oven to 425 degrees.

  2. Chop vegetables.

  3. Spray with cooking spray.

  4. Season vegetables well with salt, pepper, thyme. Toss.

  5. Transfer to a heat-resistant dish.

  6. If desired, add a bit of chicken broth to the pan.

  7. Roast in the oven for 30 minutes or until tender.
