Great broth made from roasted root vegetables.

Recipe Ingredients for Roasted Vegetable Broth

6 cups water
5 large carrots
5 celery stalks
1/4 tsp ground cloves
1 tsp black pepper
1 large turnip
2 cups parsnip
1 small onion
1 clove garlic
2 tablespoons olive oil

Recipe Directions for Roasted Vegetable Broth

Pre-heat oven to 400 degrees. Chop the carrots, onion, parsnips and turnips. Place in pan and coat in olive oil. Add garlic clove. Roast vegetables in oven for 1 hour, turning the vegetables every 15 min. Move vegetables from pan to pot with 10 cups of water. Boil until half of the water is reserved. Strain and store for later use (or use right away!)
