1 small Onions
3 small Squash, Summer, Zucchini, Includes Skin
1 cup raw Mushrooms
2 cup, chopped Broccoli
2 cups Baby Spinach
3 cup Rice, Brown, Medium-grain, Cooked
1 cup Chick Peas
3 1tsp Olive Oil

Recipe Directions for Roasted Veg Rice Salad

Roast veggies in oven and cook rice seprartely. Combine together with chick peas. serve warm.
