Roasted Veg Recipe

Yum - my sping to summer to fall favorite. The veggies can be changed up, this can be done in the ove or on the BBQ grill!

Recipe Ingredients for Roasted Veg

1 red bell pepper
1/2 yellow bell pepper
1 cup zucchini
2 cup summer squash
6 mushrooms
1 cup snap peas
3 tbsp olive oil
1/4 tsp salt
1/8 tsp black pepper

Recipe Directions for Roasted Veg

  1. Wash & chop veg to desired size. Spread on foil covered baking tray in even spacing, drizzle with Olive Oil, Sprinkle with S&P and bake.

  2. If you are makign this on the bbq make sure to chop veg to larger size so it does not fall through the bars or get a veg grill plate :)

  3. Cook for about 10 mins or until desired done-ness.

  4. Enjoy!
