With peppers, onion, and parmesean cheese

Recipe Ingredients for Roasted tomatoes

2 medium tomatoes
1/4 small yellow bell pepper, chopped
1/4 small orange bell pepper, chopped
1/4 medium onion, chopped
4 spinach leaves
2 tbsp parmesean cheese, grated
1 tbsp extra virgin olive oil
2 large mushrooms, brown, chopped

Recipe Directions for Roasted tomatoes

  1. Cut off top of tomato; de-core and deseed

  2. Add vegetables and spinach leaves into tomato "bowls"

  3. Sprinkle top with parmesean cheese (variation: can mix all vegetables with cheese first)

  4. Drizzle with EVOO (I sprayed the bottom of the tomatoes with Parkay spray)

  5. Bake in oven at 375 degrees for at least 30 minutes
