Roasted tomatoes with goat cheese spread

Recipe Ingredients for Roasted tomatoes with goat cheese spread

4 plum tomatoes
3 tbl olive oil
2 tbl balsamic vinegar
1 tbl chopped olives
3 oz cream cheese
3 oz goat cheese
1 tsp minced garlic

Recipe Directions for Roasted tomatoes with goat cheese spread

  1. Split tomatoes in half, scoop out seeds and pulp.

  2. mix together olive oil and balsamic vinegar. Pour mixture over tomatoes (split side up)

  3. Bake at 400 for about 40 minutes

  4. mix together rest of ingredients.

  5. When tomatoes have cooled drop spoonful of cheese mixture into each tomato half.
