Recipe Ingredients for roasted tomatoe soup

6 cup cherry tomatoes Tomatoes, Red, Ripe
28 oz Diced Tomatoes
1 tbsp chopped Onions
3 tbsp Extra Virgin Olive Oil
2 tsp Butter
1 []
8 oz Whipping Cream
2 cloves, raw Garlic
4 cup Broth

Recipe Directions for roasted tomatoe soup

  1. Roast tomatoes with 2T oil and salt and pepper for 35-45min.

  2. heat butter and 1 T oil over medium heat. Add garlic and onion. Saute about 6 min. Add canned tomatoes with juice, broth, thyme and roasted tomatoes. Bring to boil, then simmer 40 min partially covered.

  3. Blend the soup until smooth. Return to pt and add cream. Warm over medium heat until steaming. Garnish with grilled cheese croutons.
