Recipe Ingredients for Roasted Tomato Soup

4 tomatoes
2 carrots
1 garlic clove
1 tbsp olive oil
28 oz diced tomatoes
2 cups chicken broth
1/4 cup cream
1 salt
1 pepper

Recipe Directions for Roasted Tomato Soup

Roast first 4 ingredients in a 425 degree oven for 35 minutes. Add to stock pot along with diced tomatoes and chicken stock. Bring to a boil, then reduce to simmer for 15 minutes. Turn off heat, blend with hand blender. Add cream, salt and pepper to taste.
