Recipe Ingredients for Roasted Tomato Soup

1 lb tomatoes, large, cut in half crosswise
2/3 onion, peeled and cut in half crosswise
2 cloves garlic, large, unpeeled
2/3 tbsp canola oil
2/3 tsp canola oil, divided
1/6 tsp salt
1 Black pepper, to taste
1 1/3 cups chicken broth or vegetable broth, divided
2 2/3 tbsp tomato juice
2/3 tsp tomato paste
1/6 tsp Worcestershire sauce
1 tsp dried basil, chopped
1 Brown sugar, to taste
1/3 cup corn kernels, frozen thawed

Recipe Directions for Roasted Tomato Soup

  1. Preheat oven to 400F.

  2. Coat a baking sheet with cooking spray.

  3. Toss tomatoes, onion, garlic, salt, and pepper in a mixing bowl with 1 tablespoon oil. Spread on the prepared baking sheet and roast until the vegetables are soft and caramelized, for 30 minutes.

  4. Peel and seed the tomatoes.

  5. Place the vegetables in a food processor or blender with 1 cup broth and the remaining 1 teaspoon oil.

  6. Pulse to desired thickness and texture.

  7. Transfer the vegetable puree to a large heavy pot or Dutch oven.

  8. Add the remaining 1 cup broth, tomato juice, tomato paste, Worcestershire sauce, basil, and brown sugar.

  9. Bring to a simmer over medium heat, stirring often.

  10. Ladle into 4 soup bowls, garnish with corn, and serve.
