This is a delicious, and very easy, soup that takes about as much effort as opening a can of the condensed stuff.

Recipe Ingredients for Roasted Tomato Soup (Dairy Free)

265 grams onions, sweet yellow, cut in eighths and separated
25 grams garlic, cloves chopped in halves
400 grams tomatoes, roma, quartered
10 grams basil, rough chopped or torn
1/4 cup olive oil
1 tsp salt
1 tsp pepper
16 ounces chicken broth, low sodium
5 grams Italian parsley

Recipe Directions for Roasted Tomato Soup (Dairy Free)

  1. Preheat oven to 425.

  2. Place onions, garlic, tomatoes, and basil in a shallow baking dish. Pour olive oil over top and sprinkle with salt and pepper.

  3. Bake for 45 minutes, stirring half way through.

  4. Warm chicken broth in 3 quart sauce pan. Add parsley.

  5. When vegetables are done roasting, transfer to sauce pan with chicken broth. Simmer for 5 minutes.

  6. With and immersion blender, blender, or food processor, puree soup until it reaches a smooth consistency, about 5 minutes.

  7. Enjoy! Makes 4 one cup servings.
