Recipe Ingredients for Roasted Tomato and Shitake Sauce

10 roma tomatoes
1 large onion
6 cloves garlic
2 tsp olive oil
1/2 pound shitake mushrooms, sliced
1 tbsp fresh rosemary, chopped
2 tsp fresh thyme, chopped
2 cups water (or vegetable stock)
1/4 cup Italian parsley, chopped

Recipe Directions for Roasted Tomato and Shitake Sauce

  1. Roast the tomatoes, onion, and garlic. Puree in the food processor.

  2. Saute the mushrooms in the oil then stir in the puree. Add the water, rosemary, and thyme. Add salt and fresh ground black pepper to taste. Simmer on medium heat for five minutes, stirring occasionally. Add more liquid if the sauce becomes too thick.

  3. Remove from heat and stir in parsley. Let stand for two or three minutes before serving.
