Recipe Ingredients for Roasted Tomato Sauce

5 lb Roma tomatoes
1/4 c vegetable oil
1 c yellow onion, diced
1/2 c diced celery
1/2 c diced carrots
5 garlic cloves, minced
6 T Olive Oil
4 T butter
1/2 c Tomato Paste
4 T Basil, fresh, chopped
1 T Oregano, dried
1 T Salt, Kosher
2 T Black Pepper, fresh ground
1/2 T Crushed red pepper

Recipe Directions for Roasted Tomato Sauce

  1. Preheat oven to 250 degrees.

  2. Slice each tomato into 4 or 5 slices. Arrange on a foil lined baking sheet in a single layer. Sprinnkle the tomatoes with the vegetable oil and bake for 2 hours or until slightly shriveled.

  3. Remove the tomatoes and chop them roughly; set aside.

  4. Saute the onions, celery and carrots in the olive oil and butter over medium high heat until soft. Add the garlic and continue to cook for 3 or 4 minutes. Add the roasted tomatoes and the remaining ingredients. Simmer the sauce for 15-20 minutes over low heat.
