A warming tomato soup with a hint of basil great with a slice of bread

Recipe Ingredients for Roasted tomato & red pepper soup

6 medium Red Bell Pepper
8 large whole (3" dia) Tomatoes, Red, Ripe
2 serving Extra Virgin Olive Oil
1 tsp Sugars, Granulated
1 medium (2-1/2" dia) Onions
1 clove Garlic
5 leaves Basil, Fresh
6 Serving Vegetable Stock

Recipe Directions for Roasted tomato & red pepper soup

  1. Pre heat the oven at 190oC/375oF/ gas mark 5

  2. Place the redpeppers skin side up in a roasting tin, place the tomatoes skin side up in the same roasting tin, drizzle with 1 tablespoon of olive oil and sprinkle with the sugar salt and pepper to taste and the chopped basil.

  3. Bake for 1 hour.

  4. heat the remaining of the oiland cook the onions and garlic for about 15 minutes in acovered saucepan without colouring them.

  5. Add the peppers and the tomatoes add the stock, cover and bring to the boil, cool a little the blend in a liquidiser or with a hand blender, taste for seasoning and ad more if neccessary. serve with more chopped fresh basil.
