Made with home grown tomatoes when we had a glut

Recipe Ingredients for roasted tomato and red pepper soup

64 oz Tomatoes, Red, Ripe
7.3 oz Peppers, Sweet, Red
2 tbsp Olive Oil
3 clove Garlic
2.7 oz Onions
3.2 oz Celery
2 Serving(13 g) Bovril
1/4 cup leaves, whole Basil, Fresh
1/4 tsp Sea Salt
1 dash Pepper, Black
10 fl oz Milk

Recipe Directions for roasted tomato and red pepper soup

place tomatoes, red peppers and basil in a dish and sprinkle with olive oil. roast in a medium oven for 30 - 40 minutes, or until vegetables are squashy. Meanwhile, place onion, garlic and celery in a pan with the bovril and enough water just to cover, and simmer for 15 minutes. Add the tomatoes and red peppers and stir well. Blend with a stick or in a blender until smooth, then and the milk and salt, pepper and sugar to taste. Serve with a swirl of low fat creme fraish to finish. Freezes well.
