Roasted tomato macaroni and cheese

Recipe Ingredients for Roasted tomato macaroni and cheese

16 ounces tomatoes
1 teaspoon olive oil
1 tablespoon rosemary
1/2 teaspoon salt
1 ounce garlic
16 ounces macaroni
1/2 cup flour
5 cups 1% low-fat milk
6 ounces cheddar cheese
4 ounces fontina cheese
2 ounces Parmesan cheese
1/3 cup breadcrumbs

Recipe Directions for Roasted tomato macaroni and cheese

Preheat oven to 400F. Slice tomatoes and place on tin foil on sheet pan. Sprinkle with olive oil, half the salt, pepper, garlic and rosemary. Roast for 35 minutes. Remove from oven and put in bowl. Boil water and make macaroni as directed. In large dutch oven over med heat, combine flour slowly with milk, stirring constantly. Bring to a boil until bubbly and thickened. Remove from heat, add cheese and remaining 1/4 tsp salt, stir until melted. Add pasta and tomatoes. Sprinkle top with breadcrumbs and parmesan. Put in oven at 400F for another 25 min. Allow to cool 10 min before serving.
