You can make this harvest soup well ahead, leaving only the garnish to drizzle on at the last minute. Preparation time is 2 1/2 hours.

Recipe Ingredients for Roasted Tomato and Fennel Soup

2 kg plum tomatoes, (about 20)
1/3 cup olive oil
4 cloves garlic, minced
1/2 tsp salt
1/2 tsp pepper
1 fennel bulb
1 onion, chopped
4 cups stock, vegetable preferably
1/4 cup fresh basil, chopped
2 tbsp balsamic vinegar

Recipe Directions for Roasted Tomato and Fennel Soup

  1. Cut tomatoes in half and arrange cut sides up on a foil-lined baking sheet.

  2. In a small bowl mix 2 tbsp of the olive oil, garlic and half the salt and pepper. Brush over tomatoes. Bake at 350 degrees F until softened and shriveled and bottoms are browned - about 2 hours.

  3. Meanwhile, trip fronds from fennel bulb and reserve. Cut off stalks and discard. Cut fennel in half lengthwise. Trim out and discard core. Cut fennel into 1/2 inch pieces.

  4. In large saucepan, heat 1 tbsp olive oil over medium heat; cook fennel stirring occasionally until golden - about 8 minutes. Add 1 1/2 cups water, reduce heat, cover and simmer until very tender (about 20 minutes). Set aside.

  5. Add 1 tsp of oil to another pan; cook onion over medium heat stirring occassionally until softened - about 5 minutes. Add tomatoes and stock, bring to a boil and simmer 15 minutes.

  6. Transfer tomato mixture to blender in batches and puree. Return to pan, stir in cooked fennel (with liquid), fresh basil, and remaining salt and pepper. Heat until steaming.

  7. To serve, put soup in bowls, drizzle balsamic vinegar over top and garnish with fennel fronds.
