A generous dose of fresh basil and a healthy pinch of red pepper flakes give this soup a delicious one-two punch. Roasting the cherry tomatoes concentrates their flavor and sweetness. Serves 6

Recipe Ingredients for Roasted Tomato and Basil Soap

3 pints cherry tomatoes
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 cup chopped onions
4 garlic cloves
28 oz plum tomatoes
4 cups chicken stock
3 cups basil

Recipe Directions for Roasted Tomato and Basil Soap

  1. Preheat the oven to 450F. In a large bowl, toss together the cherry tomatoes, 1/2 tablespoon oil, and the salt and pepper. Spread these tomatoes in 1 layer on a baking sheet and roast for 15 minutes.

  2. In a large pot over medium heat, saute the onion, garlic, and red pepper flakes in the remaining 1/2 tablespoon oil until the onions begin to brown, 10 minutes. Add the canned tomatoes, stock, and basil. Add the roasted tomatoes and any liquid on the baking sheet, then bring to a boil and simmer uncovered for 20 minutes. Puree the soup in several batches in a blender (place a folded kitchen towel over the top to prevent hot liquid from splashing out). Serve warm.
