Recipe Ingredients for Roasted Tomato and Artichoke Pizza

1 pound whole wheat pizza dough
2 cups grape tomatoes
14 ounce artichoke hearts, drained and coarsely chopped
2 t olive oil
1 pinch salt
1 pepper
1 ounce Parmesan cheese, shredded
1 cup part-skim mozzarella, shredded
1/4 cup fresh basil, coarsely chopped

Recipe Directions for Roasted Tomato and Artichoke Pizza

  1. Preheat broiler.

  2. Allow dough to rest at room temp for 20-30 minutes. Roll out to 1/8" thickness and transfer to cookie sheet sprayed with oil.

  3. Toss tomatoes and artichokes with oil, salt and pepper and arrange in shallow baking pan. Broil, stirring occasionally, about 4 minutes or until charred and tomatoes are wilted.

  4. Preheat oven to 450. Bake just dough for about 8-10 minutes, until bottom is lightly brown and crisp.

  5. Top crust with vegetables, mozzarella, and Parmesan.

  6. Bake 8-10 minutes until crispy and golden and cheese is melted. Sprinkle with basil.
