Oven roasted tofu with asparagus and carrots

Recipe Ingredients for Roasted Tofu & Vegetables

1 package Extra Firm
2 carrot (7-1/2") Carrots
8 spear, large (7-1/4" to 8-1/2") Asparagus
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 tbsp Olive Oil

Recipe Directions for Roasted Tofu & Vegetables

  1. Cut ends of carrots and bottom ends off asparagus.

  2. Cut carrots in half, then quarter the pieces lengthwise.

  3. Cut the green onions into large pieces, including tops.

  4. Cut asparagus in half.

  5. Drain tofu of liquid and cut into large cubes.

  6. Toss vegetables in olive oil.

  7. Add tofu and vegetables to a large baking dish or place on a cookie sheet.

  8. Bake at 425 for about 40 minutes, turning halfway through.

  9. Serve with carrot ginger sauce.
