300 g pumpkin
20 g Spread
300 g Reduced Fat Coconut Milk
2 pint water
1 medium onion
1 chicken stock cube
1 tsp curry paste

  1. quarter medium pumpkin, spread with flora butter, season.

  2. Roast for 40 mins until soft.

  3. Scoop out pumpkin into bowl.

  4. Saute 1 onion in sprayed pan

  5. add curry paste

  6. add pumpkin

  7. add coconut milk

  8. add stock

  9. simmer
