The only way I can handle eating sweet potatoes!

Recipe Ingredients for Roasted Sweet potato & Cauliflower

1 sweet potato
1/2 head cauliflower
2 tbsp extra virgin olive oil
1/4 tsp salt
1/4 tsp pepper
1/2 tsp sesame seeds
1/2 tsp nutritional yeast
2 tbsp chopped fresh parsley
2 tsp lime juice

Recipe Directions for Roasted Sweet potato & Cauliflower

  1. Preheat oven to 350.

  2. Peel and cut sweet potato into 1 inch cubes. Chop cauliflower into 1x2 inch florets. Toss with 1 tbsp oil and spread out onto baking sheet. Sprinkle with salt and pepper. Bake for 25 minutes.

  3. Remove from oven, let cool a little, and toss in mixture of oil, sesame seeds, nutritional yeast, parsley and lime juice.
