Recipe Ingredients for Roasted Sweet Potato & Almond Soup

1 tbsp Vegetable Oil, Canola
4 medium stalks Celery
2 medium raw Carrots
20 oz Sweet Potato
1 large Onions
110 grams Organic Almond Butter (Roasted/Creamy)

Recipe Directions for Roasted Sweet Potato & Almond Soup

Chop sweet potato into large chunks and roast with chunks of garlic (if desired) and half of onion. Saute onion, garlic (if desired), celery and carrots until soft. Add 6 cups of water and bouillon seasoning (if desired) plus other seasonings and herbs to taste. Add roasted potato and cook 10 minutes. Blend and add almond or peanut butter.
