Roasted Summer Veggies Recipe

All the delicious veggies you can find at the farmer's market in August! Diced and tossed with olive oil, sea salt, and rosemary, then roasted in the oven.

Recipe Ingredients for Roasted Summer Veggies

175 g potato
125 g zucchini
225 g beets
100 g beans, green, snap
125 g beans, yellow, snap
140 g broccoli
375 g summer squash, straightneck, yellow
1 tbsp olive oil

Recipe Directions for Roasted Summer Veggies

  1. Chop all veggies into slices or cubes, as desired (slice potatoes and beets thinner, and zucchini thicker, so they cook better).

  2. Brush with olive oil and toss with sea salt and rosemary. I put a bit of seasoning salt on, too.

  3. Spread out in a foil pan and cook in the oven. (I'm not sure about the time or temperature... I think I did 400F, and until they looked done and potatoes were cooked through!). Broil for a few minutes at the end to nicely toast the veggies.
