Roasted summer squash with radishes.

Recipe Ingredients for Roasted Summer Squash and Radishes

1 medium zucchini
1 medium yellow squash
1/2 lb radishes
1 tbsp olive oil

Recipe Directions for Roasted Summer Squash and Radishes

  1. Cut squash in half lengthwise, and then in 1/4 inch slices cross-wise.

  2. Slice radishes in half (in quarters for large ones).

  3. Heat oven to 450 degrees.

  4. Toss all vegetables in 1 Tbsp of olive oil. Add salt and pepper to taste.

  5. Spread vegetables on baking pan and roast for 20 minutes.

  6. Leftovers can be re-roasted for 10-15 minutes.
