Recipe Ingredients for Roasted Summer squash with parsley

2 cups chopped zucchini
2 cups yellow squash
1/4 cup fresh parsley

Recipe Directions for Roasted Summer squash with parsley

  1. Preheat oven to 425. Arrange 2 cups chopped zucchini and 2 cups chopped yellow squash. Sprinkle with salt.

  2. Bake at 425 for 17 minutes or until crisp and tender. Toss with 1/4 cup fresh parsley. serving size is 1/3 cup.
