3 T. chopped onions 6 jalapeno peppers 1 oz. feta cheese 3 Laughing Cow wedges 2 oz. shredded reduced fat cheddar 1/2 c. chopped cilantro

Recipe Ingredients for Roasted Stuffed Jalapenos

6 pepper Peppers, Jalapeno
1 oz Feta Cheese
3 wedge Light French Onion
2 oz 2% Milk Reduced Fat Mild Cheddar
4 oz Cilantro
3 tbsp chopped Onions

Recipe Directions for Roasted Stuffed Jalapenos

  1. Heat oven to 400

  2. Slice off 1/4 side of pepper to make a small boat. If it won't sit flat, slice a small sliver off bottom.

  3. Remove seeds and veins.

  4. Mix Laughing Cow wedges, feta, and cheddar together, add chopped onion and chopped cilantro.

  5. Stuff peppers. Bake at 350-400 oven for 15-18 minutes.
