An easy microwave version that makes this ever so easy! You don't even have to brown the meat on the stove, it's an all-in-one recipe. NOTE: I've entered the amounts according to how many calories they yield. You'll really need to use 1 lb lean ground turkey and 1/2 cup calrose rice to get this # of calories.

Recipe Ingredients for Roasted Stuffed Bell Peppers with Lean Turkey (Microwave Version!)

4 green bell peppers
13.28 oz turkey
15 oz tomato sauce
0.44 cup rice
1 dash salt
1 dash pepper
1 tbsp onion flakes
1 tsp garlic powder

Recipe Directions for Roasted Stuffed Bell Peppers with Lean Turkey (Microwave Version!)

  1. Slice each green bell pepper in half and remove stems and seeds.

  2. Mix the turkey, 3/4 the tomato sauce, rice, salt, pepper, garlic, and onion flakes.

  3. Stuff the peppers with the filling.

  4. Spoon a tablespoon or two of the remaining tomato sauce over each of the tops. Cover and microwave 10 minutes at 50% power or until meat is fully cooked.

  5. Top with cheese if desired.
