Roasted squash soup with a light curry flavor

Recipe Ingredients for Roasted Squash Soup

4 cup, cubes Squash, Winter, Butternut
1.5 squash (4 inch dia) Squash, Winter, Acorn
2 tbsp Salted Butter
2 tbsp Oil Olive Extra Virgin
1 cup, chopped Onions
3 clove Garlic
4 tsp Ginger Root
2 medium apple Apples
8 oz Sherry
6 cup Natural Goodness 100% Fat Free All Natural Chicken Broth Rtsb
4 tsp Curry Powder
2 tsp Garam Marsala
1 tsp Pepper, Black
1 tsp Sea Salt

Recipe Directions for Roasted Squash Soup

  1. preheat oven to 400 degrees

  2. place squash, cut side down, on baking sheets and roast for 45 min. (until flesh is soft)

  3. In a medium saucepan over medium heat, melt butter and olive oil. Saute the chopped onion, stirring frequently, until tender. Stir in the minced garlic, grated ginger and curry powders and cook 1 min.. Add the pealed, chopped apples and sherry and simmer for 10 min. (until apples are soft enough to puree) (may need to add some of the broth to make apples soften enough)

  4. Puree batches of the cooled, peeled squash with chicken broth. Transfer the squash puree to a large saucepan.

  5. Puree the apple/onion mixture and mix into the squash puree.

  6. Heat over medium heat and season with salt and pepper to taste.
