Recipe Ingredients for Roasted Squash Soup with Maple-Glazed Bananas

2 lb butternut squash
1/2 cup pecans
1 banana
1 tablespoon maple syrup
1 cup water
1/2 cup creme fraiche
1/8 teaspoon cinnamon

Recipe Directions for Roasted Squash Soup with Maple-Glazed Bananas

  1. Preheat oven to 375.

  2. Butter a medium baking dish.

  3. Halve and seed squash and season with salt.

  4. Set cut side down in baking dish.

  5. Bake for 1 hour 10 mins or until very tender.

  6. Let cool slightly.

  7. Spread pecans in pie plate and toast until fragrant, 7 mins.

  8. Let cool, then coarsely chop and transfer to a bowl.

  9. Slice the banana into 1/2" rounds.

  10. Add banana and syrup to bowl with pecans and stir to coat.

  11. Peel the squash.

  12. Add squash to blender with water, creme fraiche, and cinnamon.

  13. Puree until very smooth.

  14. Transfer soup to a medium saucepan and heat gently.

  15. Ladle into bowls and serve with banana-nut topping.
