Chopped butternut squash, sweet potatoes, and potatoes combine in a flavorful side dish. Very high in vitamin A.

Recipe Ingredients for Roasted Squash potato Medley

1 sweetpotato, medium, with skin diced
1 potato, medium with skin, diced
1 1/2 cups butternut squash, diced
1 small onion, diced
3 cloves garlic
1 3/10 tablespoons olive oil
1/4 tsp sea salt
1/2 tsp black pepper

Recipe Directions for Roasted Squash potato Medley

Dice sweet potato, potato, and butternut squash. Chop onions and garlic. Sprinkle with salt and pepper. In jelly-roll pan, pour 1/2 olive oil. Put vegetables into the pan and stir. Drizzle remaining olive oil onto the vegetables. Bake 20 minutes at 450 degrees. Stir vegetables mid-way through the baking.
