great alternative to fries. They don't get crispy, but they are tasty.

Recipe Ingredients for Roasted Spiced Sweet Potatoes

1 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon dried oregano
1/2 teaspoon dried hot red pepper flakes
1 teaspoon kosher salt
2 lbs sweet potatoes
2 tablespoons vegetable oil

Recipe Directions for Roasted Spiced Sweet Potatoes

  1. Cut sweet potatoes lengthwise into 1-inch wedges.

  2. Combine first four spices in a mortar and grind. Add salt to the spices.

  3. Drizzle potatoes with oil and spices. Toss to coat. Cook at 425 for 20 minutes, turn, then cook for an additional 15 to 20 minutes.
