Recipe Ingredients for Roasted Shrimp Salad

1 1/2 lbs shrimp (21-25 per lb), roasted
1 tblsp orange zest
1 tblsp orange juice
3/4 cup mayonaise
1/2 tblsp white wine vinegar
1/4 cup red onion, diced
1/8 cup fresh dill, rough chopped
1 tblsp capers, drained and rinsed

Recipe Directions for Roasted Shrimp Salad

  1. roast shrimp in 400 degree oven for 6-8 minutes (drizzle with olive oil, salt and pepper)

  2. mix orange zest, orange juice, mayonaise and vinegar in bowl

  3. add vegetables

  4. after shrimp has cooled slightly, add sauce to personal taste - no need to use it all
