Recipe Ingredients for Roasted Shrimp with Peppers and Lemon

2 cup Long Grain Brown Rice
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 fruit without seeds Lemons
1 tsp Thyme, Fresh
1 large Onions, Spring Or Scallions
1/4 tsp Spices Crushed Red Peppers
2 serving VIGO EXTRA VIRGIN OLIVE OIL
0.5 tsp Salt, Table
1/4 tsp Spices Ground Black Pepper
16 oz Large Shrimp, raw
0.5 tsp Paprika

Recipe Directions for Roasted Shrimp with Peppers and Lemon

  1. Heat oven to 450F.

  2. Cook the rice according to the package directions.

  3. Meanwhile in a large bowll, toss the thinly sliced bell pepper, thinly sliced lemon, 6 sprigs of fresh thyme, 4 halved lengthwise and sliced into 1 inch pieces scallions, 1/4 tsp crushed red pepper, 1 tbsp of the oil, and 1/4 tsp each salt and black pepper.

  4. Spread the mixture on a rimmed baking sheet (reserving the bowl)

  5. .

  6. Add the shrimp to the bowl and toss with the 1/2 tsp paprika, remaining tablespoon of oil, 1/2 tsp salt, and 1/4 tsp pepper.

  7. Nestle in the mixture on the baking sheet.

  8. Roast until the shrimp are cooked through and the bell peppers are tender, 10 to 12 minutes.

  9. Serve over the rice.
