Recipe Ingredients for Roasted Salmon & Tomatoes

19 oz Salmon, Coho, Wild
6 medium raw Plum Tomato
2 Teaspoon Worcestershire Sauce
0.25 tsp Pepper, Black
3 serving Dijon
1 tablespoon Oregano

Recipe Directions for Roasted Salmon & Tomatoes

  1. Thaw fish if frozen. Rinse. Cut fish into 4 serving size pieces. Lightly coat a 13x9x2 baking pan with cooking spray. Arrange fish, skin side up, in prepared pan, turning under thin edges. Sprinkle fish with 1/8 tsp salt.

  2. Arrange tomatoes around fish. Sprinkle tomatoes with Worcestershire, pepper, and 1/8 tsp salt.

  3. Bake uncovered for 12-16 min. Remove and discard skin from fish.. Tranksfer fish to serving platter. Stir mustard and oregano into tomatoes. Serve tomato mixture with fish. If desired, garnish with oregano sprigs.
