Recipe Ingredients for Roasted root veggies

1/2 cup red potato, cut into 1/4 in dice
2 medium carrots, sliced 1/4 in thick
1/2 cup parsnip, sliced 1/4 in thick
1/2 red onion
2 tbsp. extra virgin olive oil
1/2 tsp kosher salt

Recipe Directions for Roasted root veggies

  1. preheat oven to 425.

  2. chop all vegetables and put into a medium mixing bowl. Add the olive oil and the salt and toss well to coat.

  3. Spread evenly onto a foil-lined baking sheet and bake for ~15 mins. Toss the vegetables and broil until the desired color is acheived.
