Any hardy vegetable will do, such as carrots, sweet potato, acorn squash. If using red or green pepper, zucchini, or any other delicate vegetable, add them to the oven later than the root vegetables. Also, adjust the oven temp. as needed--my convection oven requires a lower temperature, and I cover the vegetables with foil half way through the cooking time.

Recipe Ingredients for Roasted Root Vegetables

3 cups butternut squash, cubed (approx. 1 med.)
2 cups parsnips, peeled and sliced
3 potato+medium+2-1/4"+to+3-1/4"+dia. Yukon Gold potatoes
3/4 cup red onion, quartered
1 tablespoon chopped fresh thyme
2 tablespoons chopped fresh rosemary
1/4 cup olive oil
2 tablespoons balsamic vinegar or lemon juice
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Recipe Directions for Roasted Root Vegetables

  1. Preheat oven to 450 degrees F (245 degrees C).

  2. In a large bowl, combine the squash, parsnips, and Yukon Gold potatoes. Separate the red onion quarters into pieces, and add them to the mixture.

  3. In a small bowl, stir together thyme, rosemary, olive oil, vinegar, salt, and pepper. Toss with vegetables until they are coated. Spread evenly on a large roasting pan.

  4. Roast for 35 to 45 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.
