1 sweet potato
2 tbsp olive oil
1 fennel bulb
1 onion
1/2 cup tomatoes
1 cup eggplant
1 zucchini

Recipe Directions for Roasted Root Vegetables

Cut vegetables into evenly sized pieces. Toss with olive oil and roast in oven at 450F for approx 90 mins.
