great spicy root vegetable side dish

Recipe Ingredients for Roasted Root Vegetables

5 cloves of garlic
1/4 lbs carrots
1/4 lbs parsnips
1/4 lbs beets
1/4 lbs sweet potatoes
2 teaspoons onion powder
2 tablespoons olive oil
1 tablespoons paprika
1 dash of salt
1 dash of pepper

Recipe Directions for Roasted Root Vegetables

  1. peel and cut vegetables into 1 inch pieces

  2. preheat oven to 400 degrees

  3. put vegetables in a bowl (except garlic)

  4. toss with the oil

  5. sprinkle with the salt, pepper and paprika

  6. spread the veggies in a orasting pan, do not crowd

  7. roast, stirring every 15 minutes, until tender and evenly browned, 45-50 minutes

  8. add garlic cloves during the last 20 minutes.
