A mix of hearty root vegetables, seasoned and roasted, make a delicious and filling side for meats or are great on their own!

Recipe Ingredients for Roasted Root Vegetables

1 lb beets
3/4 lb parsnip
0.12 lb shallots
3/4 lb eggplant
17/20 lb acorn squash
9/20 lb zucchini
2 tbsp olive oil
1 tsp thyme
1 tsp black pepper

Recipe Directions for Roasted Root Vegetables

  1. Preheat oven to 400 degrees.

  2. Cut all vegetables into large pieces, at least 1 1/2" sides, so they hold their shape.

  3. Spray a glass baking dish with nonstick cooking spray.

  4. In a large bowl, toss vegetables with olive oil and seasonings.

  5. Spread out vegetables in baking dish.

  6. Place in the center of the oven and bake at least 50 minutes, or until vegetables are tender and browned.

  7. Let cool slightly and serve!
