I bought an enormous rutabaga and wanted to figure out how to showcase it.

Recipe Ingredients for Roasted Root Vegetables

1 rutabaga
1 large onion
8 carrots
2 small potatoes
1 tsp salt
1 tsp black pepper
2 tbsp vegetable oil

Recipe Directions for Roasted Root Vegetables

  1. Dice all vegetables into approx 3/4" dice.

  2. Toss with oil, salt, and pepper.

  3. Roast in a preheated 400F oven for 40min or until vegetables are fork tender.
